Stuffed Mushroom Sandwich Kebab


Everyone loves kebab. This one is a unique veg kebab. It is one of my innovative recipe from my kitchen. Normally stuffed mushroom can be made in various way which is very popular. Here I have made something different with this. First I have stuffed the mushroom then sandwich two stuffed mushroom. Then marinate it with spices and after that make the kebab. Finally results will come out awesome. Although Its sounds hard, but surprisingly its very easy to make. Trust me, anybody can try out this recipe even beginner. As Mushroom has so many health benefit and in this recipe it contains very low oil, so its a very healthy as well as tasty recipe. You can serve it as a party starter / snacks. It will also be a perfect accompanied with tea or coffee in a winter evening. Enjoy it hot.

Serves            6 people

 

 Ingredients:

  • Mushroom(washed)-12 pieces
  • Oil for greasing mushroom pockets
  • For stuffing:
    • Cooking Oil-1 tablespoon
    • Chopped Onion-1 CUP
    • Ginger-garlic-green chilli paste-1 tablespoon
    • Tomato(Chopped)-2 tablespoon
    • Spinach(Chopped)-1 cup
    • Chopped Coriander-2 tablespoon
    • Kashmiri red chilli powder-1 tablespoon
    • Black pepper powder-1/2 tablespoon
    • Chat masala-1 teaspoon
    • Salt to taste
    • Grated cheese-1 cup
  • For kebab marination:
    • Curd-1 tablespoon
    • Kashmiri red chilli powder-1/2 tablespoon
    • Black pepper powder-1/2 tablespoon
    • Turmeric powder-1 teaspoon
    • Cumin powder-1 teaspoon
    • Coriander powder-1 teaspoon
    • Garam masala powder-1 teaspoon
    • Chat masala-1 teaspoon
    • Salt to taste
    • Cooking Oil-1 tablespoon
  • For serving:
    • Mint coriander chatni
    • Mayonnaise red chilli dip
    • Lemon wedges
    • Sliced onion
    • Tomato shells (optional)

How to Make:

  1. Take mushrooms and then clean out the stems to make pockets. Keep it aside.
  2. Then chop all the stems finely. Keep aside.
  3. Add 1 tablespoon oil in a pan. Allow it to heat.
  4. Then add chopped onion and saute until it becomes translucent.
  5. Season with some salt.
  6. Add ginger garlic green chilli paste and saute it well.
  7. Add chopped tomato and saute it.
  8. When tomato became soft then add chopped mushroom stems.
  9. Add chopped spinach.
  10. Add Kashmiri red chilli powder and black pepper powder.
  11. Let it cook for few minutes closing the lid.
  12. Add chat masala and mix it well.
  13. Add chopped coriander leaves at the end and mix it well. Turn off the flame. Take it out into a bowl.
  14. Now mix 1 cup grated cheese in it. Your stuffing is ready now. Keep aside.
  15. Grease the mushroom pockets with oil.
  16. Fill the pockets with the stuffing.
  17. Now take curd in a bowl. Mix all the dry masala in it. Add oil and salt and mix everything.
  18. Marinate the outside of the mushroom well with this mixture.
  19. Sandwich 2 mushroom and skewered it.
  20. Put the skewered mushroom on a parchment pepper lined baking tray.
  21. Bake it at 180°C for 20-25 minutes in a preheated oven.
  22. Once done, take out the tray from oven.
  23. Serve the kebab hot with some garnishing. Here I have used mint coriander yogurt chatni and mayonnaise with red chilli sauce served with some lemon wedges and sliced onion. I have served the dips in tomato shells.

My Tip:

  • Mushroom should be washed properly with water.
  • You can use any marination for kebab. If you use wooden skewer then surely soak it in water for 30 minutes before use otherwise it may gets burn .
  • Here I have served the dip in tomato shell with kebab. This is just for decoration only.  If  you don't want you can serve it in any small bowl.
