12 Minutes MeatBall EggDrop Soup
In winter/ rainy season, soup is my favourite food at dinner. This soup contains vegetables as well as chicken meatball, so its very healthy for anybody. Sometimes I have it with a slice of bread toast or with handful of croutons. It gives me comfort even when I suffer cold and cough. This soup can be served as starter also. I have this soup even when I am in diet. It gives me the nutrition without any extra fat. One more thing, it is very easy to cook and needs very less time. Due to this, anybody can make this soup and get the nutrition from the piping hot tasty healthy delicious soup.

Serves : 5 people
Ingredients:
- Olive oil- 1 Tablespoon
- Chicken minced- 250 gram
- Garlic minced- 1 tablespoon
- Ginger minced- 1 tablespoon
- Spring onion greens chopped- 1/2 cup
- Carrot grated- 1 medium
- Spring onion white sliced- 1.5 tablespoon
- Tomato chopped- 1 medium
- Capsicum chopped- 1 medium
- Chicken stock- 2 cup
- Eggs-2 pieces
- Salt to taste
- Black pepper powder-as per taste
- Soya sauce- 1.5 tablespoon
- Vinegar-1 Tablespoon
- Corn flour-4 tablespoon
- For garnishing
- Few Spring onion strips
How to Make:
- Break 2 eggs in a cup and beat it with little salt and pepper.
- Now mix the chicken minced with 1.5 Tablespoon beaten egg, 3 tablespoon cornflour, Salt, black pepper, 1/2 tablespoon Soya sauce. Keep it aside.
- Heat oil in a vessel.
- Add garlic and ginger. Saute it for a minutes.
- Then add chicken stock and water. Stir it well.
- Add all the veggies and 1/2 of spring onion one by one in it.
- Season with salt and black pepper powder.
- Then cover for 2-3 minutes.
- Mix the leftover cornflour with water. keep it aside.
- Now make and drop the meatball one by one using your hand.
- Add 1 tablespoon soya sauce.
- Let it cook for 5 minutes.
- After that add spring onion greens.
- Now add cornflour solution. Mix it well.
- Now finally add all beaten egg. Cover it for 2 minutes.
- Then add vinegar and little pepper powder.
- Serve it piping hot. Add leftover spring onion from top.
- Garnish with spring onion strips.
My Tip:
- You can add chopped french beans, chopped red/ yellow bellpepper or cabbage also.
- Lemon juice can be used instead of vinegar.
- If you want to use any red-meat, then it will take little more time to boil.
- Here cornflour is used as a thickening agent in soup, so it can be omitted if you don't want it in soup.
- Cornflour is used in chicken minced as a binding agent. Instead of that all purpose flour can also be used.
- If you don't have chicken stock, vegetable stock/ plain water can be used instead of that.
