Singapore Fried Rice Vermicelli Noodles





Singapore Fried Rice Vermicelli Noodles is a nonveg fried noodles recipe with rice vermicelli. Here I have used lots of veggies also and You get flavour of some Indian spices with taste of some sauces. This noodles is my one of the favorite noodles. It is a complete meal as it contains prawns,chicken,egg,different type of veggies and sufficient amount of carbohydrate. So you can have it as any full meal. Children also love it as it looks colorful as well as tasty and delicious.

Ingredients:

  • Rice vermicelli noodles-125 gram
  • Prawns(Headless and peeled)-10 numbers.
  • Boneless chicken (strips)-100 gram
  • Egg-2 numbers
  • Olive oil-4 tablespoon
  • Garlic(chopped)-5-6 cloves
  • Onion(Sliced)-1 medium
  • Ginger(chopped)-1 tablespoon
  • Fresh red chilli (chopped)-1 tablespoon
  • Carrot(Grated)-1 large
  • French beans(Chopped)-3/4 cup
  • Red bell pepper (Sliced)-1 small
  • Yellow bell pepper (Sliced)-1 small
  • Green bell pepper (Sliced)-1 small
  • Moong bean sprouts (Homemade or storebought)-1/2 cup
  • Spring onion(Chopped)-3/4 cup
  • Turmeric powder-1/4 teaspoon
  • Curry powder-2 teaspoon
  • Black pepper powder-1 teaspoon
  • Coriander powder-3/4 teaspoon
  • Rice vinegar-1 tablespoon
  • Soya sauce-1 tablespoon
  • Oyster sauce-1 tablespoon
  • Salt to taste
  • For garnishing,
    • Few Spring onion strips
    • Few parsley leaves


How to Make:

  1. Soak the rice noodles in hot salt water for 5-7 minutes.
  2. After that strain it and leave it in cold water.
  3. Now take 2 tablespoon oil in a large wok and allow it to heat.
  4. Meanwhile marinate the prawns and chicken with salt.
  5. Now fry the prawns until it change the colour little bit and then take out the prawns into a plate.
  6. Break the eggs into the leftover oil.
  7. Season the egg with salt and stir it for 2-3 minutes.
  8. Then take out the scrambled egg from wok.
  9. Again add 2 tablespoon oil in this wok and allow it to heat.
  10. Add chopped garlic and saute for a minute at high heat.
  11. Add sliced onion and saute it.
  12. Season with salt.
  13. Now add chicken strips and saute it until it becomes tender.
  14. Add ginger chopped and saute.
  15. Add fresh red chilli chopped.
  16. Add grated carrot and chopped french beans.
  17. Add sliced red, yellow, green bellpepper.
  18. Add moong bean sprouts and saute everything well for a couple of minutes in high heat.
  19. Add spring onion and stir it.
  20. Add dry spice powder.
  21. Add rice vinegar.
  22. Add soya sauce and oyster sauce.
  23. Now add fried prawns and scrambled egg.
  24. Now strain the rice noodles from cold water.
  25. Now add noodles in the wok and add leftover spring onion.
  26. Mix the noodles very gently so that it will not be broken.
  27. Now toss it at high flame for few times and turn off the flame.
  28. Serve the noodles into a serving dish.
  29. Garnish it with spring onion and parsley leaves or as per your choice. Enjoy it hot.

My Tip: 

  • Be careful about the rice noodles because it is very thin and delicate. It should not be over soft.
  • You also can use here mushroom or other veggies you like.
  • If you don't have three colours of bellpappers, you can use any one of them in sufficient quantity.
  • Don't over cook the prawns to avoid stiffness.
  • Vegetable will be cooked at high flame to retain the crunch and colour.
  • Be careful to add the salt because soya sauce and oyster sauce contain generous amount of salt.
