Instant Shahi Rabdi (In 10 minutes) | Kesari Rabdi




In any festive time, Rabdi is always a super hit dessert to treat anybody or yourself. But it takes a lot of time to prepare which people don't have in their busy schedule now. Here I am presenting a recipe for you which is 10 minutes Rabdi recipe. Trust me, here you don't need to compromise your taste. Many people use bread/cornflour to thicken the milk which I don't like. This recipe is completely milk based. So, lets go for the recipe.

Cook Time       10 minutes

Serves            5 people


Ingredients:

  • Evaporated Milk- 500 gram
  • Condensed Milk- 397 ml (1 tin)
  • Green Cardamom Powder- 1/2 teaspoon
  • Pinch of Saffron
  • For garnishing
    • Pistachios(blanched)- 12-15 pieces
    • Few saffron strings

How to Make:

  1. Take evaporated milk and condensed milk in a heavy bottom pan. Mix well.
  2. Now keep cooking in low heat until the cream layer is formed on top.
  3. In between stirring is must in a few seconds interval.
  4. When cream layer starts to come, set it to side wall of the pan. Let it set.
  5. Add pinch off saffron.
  6. After few minutes scrape out the sides into milk.
  7. Add cardamom powder. Give a good stir.
  8. Cook for few more minutes. Continuous stir is very important to avoid burning from bottom.
  9. When it is thick (which satisfies you) turn off the heat.
  10. Chop pistachios finely. Keep aside for garnishing.
  11. When it is cold serve it with garnishing on top.

My Tip: 

  • Stirring is very important part for this recipe to avoid burning from bottom.
  • In this recipe, Cooking will be done at low heat.
  • Don't thicken up much because it will become more thick once gets cooled.
  • Here I don't use any sugar as condensed milk contain high sugar level.
  • Garnishing can be done as per choice.
