Crispy Salmon on Dill Pasta with Tossed Tomato




Its a traditional Italian style pasta recipe with fried Salmon. Here I am showing the easiest way to make this recipe but you will get the perfect authentic taste. You can make it for your lunch box or breakfast or dinner. This recipe is also recommended for beginners. Some time, children don't like  to eat fishes. In this way you can feed them. I am sure they will love it.
Lets go to the recipe.

Preparation Time : 10 minutes

Cook Time       30 minutes

Serves            2 people

Ingredients:

  • Salmon fillet(on the skin)- 2 piece(large)
  • Tomato- 6 medium
  • Dill leaves- 1/2 bunch
  • Garlic(peeled)- 5 cloves
  • Butter- 1.5 tablespoon
  • All purpose flour- 1.5 tablespoon
  • Salt to taste
  • Black pepper(crushed)- 2 teaspoon
  • Olive oil- 2 tablespoon
  • Cooking cream- 2/3 cup
  • Parmesan cheese(grated)- 4 tablespoon
  • Tagliatelle Pasta-200 gram

How to Make:

Preparation:

    1. Chop the garlic finely. Keep aside.
    2. Cut each tomatoes into half. Set aside.
    3. Take the washed dill leaves and then chopped finely.

Pasta Boiling:

    1. Boil some water in a large vessel. Then add pasta into boiling water. Add salt to it.
    2. Allow to boil pasta for 7 minutes in medium heat. [See My Tip]
    3. Strain the pasta from hot water and then drizzle some olive oil in it. Keep aside.

Frying the fish:

    1. Marinate the fish fillet with salt & pepper. Sprinkle some All purpose flour. Coat the fish well.
    2. Take olive oil in a pan. Heat up little and add the fish fillets. Fry until its crispy from both sides.

Tomato tossing:

    1. Add butter into the leftover oil. Allow to melt.
    2. Add all halved tomatoes.
    3. Add some chopped dill.
    4. Sprinkle some crushed black pepper and salt.
    5. Add splash of water. 
    6. Then cover for 3 minutes in medium to low heat to get cooked.[See My Tip]
    7. When done shift to a plate and keep aside.

Pasta cooking:

    1. Add leftover olive oil in the same pan.
    2. Put Butter. Let it melt.
    3. Then add chopped garlic. Cook for a minute.
    4. Add flour and saute in medium heat for couple of minutes.
    5. Add cream into it. Mix well.
    6. Season with black pepper.
    7. Put chopped dill leaves.
    8. Add little water.
    9. Grate some Parmesan cheese in it.
    10. Put the boiled Pasta.
    11. Coat the pasta with sauce well.
    12. Adjust the black pepper.
    13. Finish with grated Parmesan cheese.
    14. Turn off the heat.

Assemble the platter:

    1. Place half portion of pasta on plate.
    2. Put a piece of fried fish on top of the pasta.
    3. Place some of the tossed tomato from sides and one should be on the fish.
    4. Grate some Parmesan cheese from top. But its optional. For me, this step completes the dish perfectly.
    5. Garnish with a sprig of dill leaves on top.

My Tip: 

  • Pasta should be boiled to "Al Dente" state that means it should be boiled but still have a firm bite to the tooth.
  • Tomato should not be overcooked. Make sure its pulpe is not coming out.
  • Pasta should be handled with care. Otherwise, it can get break.
  • Here you can use cherry tomato also instead of regular tomato. In that case don't half it.
  • Any type of pasta can be used here.
