Baked Raw Mango Cutlet | Healthy vegetarian Snacks




This cutlet recipe is little different from normal cutlet. We all know cutlet is a deep fried snacks which makes it unhealthy. Sometime we avoid it due this reason. But if it is possible to make cutlet healthy without compromising the taste, then we can eat it. So here is the recipe for how to make cutlet in healthy way without deep frying. Today I am showing you Raw Mango Cutlet. Its a complete vegetarian recipe(Eggless).
Lets go to the recipe.

Preparation Time : 20 minutes

Cook Time       15 minutes

Bake Time       30 minutes

Serves            : 6 people

Ingredients:

  • Raw mango paste- 1 medium size
  • Onion (chopped)- 1 medium size
  • Boiled Potato- 1 large size
  • Grated ginger- 1 tablespoon
  • Powder spices,

    • Turmeric powder- 1/2 teaspoon
    • Red chilli powder- 1/2 teaspoon
    • Cumin powder- 1 teaspoon
    • Coriander powder- 1/2 teaspoon
    • Garam masala powder-1 teaspoon
    • Chat masala powder- 1 teaspoon
    • Black pepper powder- 1 teaspoon
    • Roasted cumin powder-1/2 teaspoon
  • Whole spices,
    • Cumin Seeds- 3/4 teaspoon
    • Whole Panch Phoron(Bengali 5 spice)- 1 teaspoon
    • Whole Dry Red Chilli- 2 Pieces
  • Salt to taste
  • Sugar to taste
  • Bread crumb for coating
  • Corn flour- 3 tablespoon
  • Oil- 7 teaspoon

How to Make:

  1. Mash the boiled potato and keep aside.
  2. Now take 3 teaspoon oil in a pan and allow it to heat.
  3. Add chopped onion to fry until it changes the colour. 
  4. Then add grated ginger and saute it.Season with salt.
  5. Now add raw mango paste.
  6. Then add all powder spices except roasted cumin powder & garam masala powder. Cook for a minute.
  7. Then add mashed potato and mix with the cooked spices. Cook it for 10 minutes in medium to low heat. In between stir it continuously to prevent burning.
  8. When the cutlet mix start to leave the pan, shift it to a side. Make some space in pan.
  9. Add 2 teaspoon oil in empty space in pan. Allow it to heat.
  10. Then add whole spices. Let it crackle.
  11. Then add roasted cumin powder & garam masala powder. Mix it with the cutlet mix. It will add an extra flavour to your cutlet.
  12. Now turn off the heat and allow it to cool to room temperature.
  13. Mix little water with cornflour and make a slurry. Add little salt to taste.
  14. Divide the cutlet mix into equal portion. Then give them a round shape with your palm. Discard the red chillis.
  15. Here I am using a cookie cutter to give a heart shape to the cutlet. But it is optional.
  16. Lightly press it  from top to demould into a plate.
  17. Now dip each cutlet into cornflour slurry & directly put into breadcrumb to coat.
  18. Repeat this one more time for each & every cutlets.
  19. Apply  very little oil on top side of the cutlet(1 teaspoon).
  20. Bake it in a preheated oven for 15 minutes at 200°C.
  21. Once done, take out from oven. Flip the cutlets and apply oil to the another side.
  22. Put it back to the oven to bake again for 15 minutes at 200°C.
  23. Then enjoy it hot with ketchup, chutney or any sauce.


My Tip: 

  • Baking time may vary little oven to oven. So Keep eye on baking.
  • If you mango is too sour, you can add less or add sugar more. For me, this is perfect.
  • I have boiled the potato with salt(as per taste).
