Sausage Risotto (Italian cuisine) | One pot meal




Risotto is a traditional Italian creamy tasty one pot meal (rice) recipe which is very famous but easy to make. It can be made veg or nonveg. Here I have shown a nonveg recipe as I am a non vegetarian. Nonveg risotto can be made with different meat / fish even Bacon also. For this recipe, I have used Sausage. This is one of my favourite option for it. If you are in hurry, but need a homemade yummy meal, so go to this recipe.

Preparation Time : 5 minutes

Cook Time       1 hour 15 minutes

Serves            2-3 people


Ingredients:

  • Boiled Sausage- 220 gram
  • Olive oil- 1 tablespoon + 1 teaspoon
  • Butter- 15 gram + 15 gram
  • Chopped onion- 1 large
  • Grated garlic- 4 large cloves
  • Arborio rice(washed)- 1 cup
  • Salt to taste
  • Black pepper(crushed)- 1 teaspoon
  • Dried Rosemary- 1 teaspoon
  • Dried thyme- 1 tablespoon
  • Chicken stock- 3 cup
  • Italian white wine- 1 cup
  • Grated Parmesan cheese- 1/2 cup
  • Cooking Cream- 1 tablespoon
  • Italian Seasoning for serving

How to Make:

  1. Cut the boiled sausage into small pieces. 
  2. Take 1 tablespoon olive oil in a deep pan. Don't heat too much, otherwise it will loose its important health benefit.
  3. Fry the sausage at medium heat until it gets golden.  
  4. Once done, take out from pan and keep aside.
  5. Now add 1 teaspoon olive oil in the same pan.
  6. Add butter(15 gram) and allow it to melt.
  7. Add chopped onion and saute until it changes the colour.
  8. Add grated garlic and saute until its raw flavour is gone.
  9. Add washed rice and saute for couple of minutes.
  10. Pour 1 cup chicken stock followed by Italian white wine.
  11. Now cover it & cook for 10 minutes in medium heat.
  12. Season with salt & black pepper.
  13. Again cover cook for 10 minutes.
  14. Now you can see all liquid has been absorbed by rice. So add 1 cup stock and cover to cook for 15 minutes in medium to low heat.
  15. Add last cup of chicken stock and mix well. Cover for 10 minutes to cook.
  16. Then add hot water as required.(almost 3/4 cup to 1 cup)
  17. Add rosemary & thyme. Cover & cook again 15 minutes in low heat.
  18. Now time to add grated Parmesan cheese followed by butter(15 gram) and cooking cream.
  19. Finish with fried sausage(use half of sausage).
  20. Turn off the heat & give a rest time for 10 minutes before serving.
  21. Serve it hot with fried sausage(use leftover). Sprinkle little Italian seasoning(optional) from top.

My Tip: 

  • If you don't have Arborio rice, you can use any short grain sticky( high-starch) rice. That should be perfect substitute.
  • For this recipe, Salt has to be added very carefully, because many ingredients (to be added) contains salt (e.g. Chicken stock,Cheese etc.)
  • The rice should be soft & sticky in risotto but still have bites. Texture of risotto should be Soft & creamy .
