Avocado Grilled Pepper Sandwich | Breakfast & Brunch Recipe | Healthy Diet Recipe


It is a everyday healthy vegan recipe for breakfast or brunch. You also can make it for your kid's tiffin. This recipe is very suitable for vegetarian & vegan people. If you are in hurry or you have very less time at the morning, you can make it for your lunch box. Those people who like healthy as well as tasty food, it can be a very good option for them.
Now, Lets go to the recipe.

Preparation Time : 15 minutes

Cook Time       20 minutes

Serves            2 people

Ingredients:

  • Bread Slice- 4 Piece
  • Avocado- 1 Whole
  • Lemon juice- 1.5 tablespoon
  • Coriander leaves(chopped)- 1/4 cup
  • Lemon Zest- 1 teaspoon
  • Salt to taste
  • Extra Virgin Olive Oil- 1 tablespoon
  • Freshly Crushed Black Pepper to taste
  • Green Bell pepper- 1/2 (Cut into 2 pieces)
  • Yellow Bell pepper 1/2 (Cut into 2 pieces)
  • Red Bell pepper- 1/2 (Cut into 2 pieces)
  • Olive oil- 1 Tablespoon

How to Make:

  1. Cut the avocado from middle.
  2. Give a twist to separate two halves.
  3. Take out the seed.
  4. Peel the avocado. If your avocado is ripe, you can peel it easily with your hand. Otherwise you can scoop out the pulp. 
  5. Slice avocado so that it will make it easy to mash. Transfer into a bowl.
  6. Now add lemon juice & mash it well.
  7. Add chopped coriander leaves, lemon zest , salt and extra virgin olive oil.
  8. Give a good mix. Keep aside.
  9. Take all bell pepper in a bowl. Sprinkle little salt & crush the pepper to taste. Marinate well.
  10. Take a grill pan. Add olive oil.
  11. Place all the pepper to grill in medium to high heat. It take 5 min each side.
  12. Once done, take out from pan. Keep aside.
  13. Place bread on hot pan. Grill until it gets crispy from both side. When one side is done, flip to cook from other side. Same way, make all the bread ready.
  14. Now spread some mashed avocado in a bread. Place 3 types of grilled pepper (1+1+1). Sprinkle little crushed pepper. Again apply avocado mash on another bread and cover the sandwich. 
  15. Now cut it into two pieces so that it will get your byte easy.
  16. Enjoy with any fruit juice or tea/coffee(As per your choice).

My Tip: 

  • Here you can use any grilled veg as per your choice. 
  • Any bread can be used (White/Brown/Multigrain).
  • Toast the bread in medium to low heat, it will make your toast perfect crispy.
