Bengali Bhaja Masala | Bengali Roasted Spice Mix for Ghugni, Chat , khichuri, Curry etc




Bhaja masala is a traditional Bengali spice mix which is used in many curries like Ghugni, Cholar dal, alur dom, Labra, kumror chokka etc, Bhoger Khichuri, Chumur, phuchka, chat, alu kabli, doi bora, etc. Its made with all very common Indian spices. You don't need more time to make it. Just roast and grind, you can store it and use when required.
Lets go to the recipe.

Cook Time       4 minutes

Grinding Time   :  2 minutes


Ingredients:

  • Bay Leaf- 2~3 pieces
  • Dry Red Chilli- 6~8 pieces
  • Green Cardamom- 6 pods
  • Cinnamon Stick- 1 piece
  • Fennel Seeds- 1 tablespoon
  • Coriander Seeds- 1.5 tablespoon
  • Cumin Seeds- 3 tablespoon

How to Make:

  1. Heat a pan.
  2. Add bay leaf followed by dry red chilli. Break them for easy handling.
  3. Roast for 30 seconds in medium to low heat(continuous stirring) .
  4. Add cardamom and cinnamon. Roast for 30 seconds(continuous stirring).
  5. Add coriander and allow it to roast for 30 seconds(continuous stirring).
  6. Finally add fennel seeds & cumin seeds. Roast them for 2 minutes in low heat.
  7. Once done, turn off the heat & transfer into a bowl to cool to room temperature.
  8. Put them into a blender or grinder jar. Make a fine powder.
  9. Keep into a clean & dry airtight container. You can store it for 1 month. Don't keep more than that as it will loose its nice fragrance.

My Tip: 

  • For even roasting, continuous stirring is very important.
  • Don't add all spice together. If you add all together for roasting, some will be over roasted and some left undone.
  • For taking out spice powder, always use a clean & dry spoon. It will keep your spice fresh.
