Ukadiche Modak | Steamed Modak | Ganesh Chaturthi Special Recipe




Modak is a famous traditional simple sweet which is specially made in Ganapati puja for offering to God Ganesha. In Maharastra, Ganesh puja will be incomplete without modak. Ukadiche Modak is a traditional & authentic  Maharastrian recipe, famous in Marathi community. Modak is also can be made in frying process and there are lots of variation. Ukadiche Modak is traditionally made by steaming in haldi/ turmeric leaves. But here I am not using that leaves. Because I didn't get it in my place.  But We can do it in a normal steamer. Modak has a particular shape. Here I have shared two ways for modak making (handmade & using mould).

Preparation Time : 20 minutes

Serves            8 people


Ingredients:

  • For Filling,
    • Fresh Scraped Coconut- 1 cup 
    • Grated Jaggery- 1/2 cup
    • light roasted Poppy Seeds- 1 teaspoon
    • Cardamom Powder- 1 teaspoon
    • Ghee- 1/2 teaspoon
  • For Dough,
    • Water- 1 Cup
    • Rice Flour- 1 Cup
    • Ghee- 1/2 teaspoon
    • Salt- 1/4 teaspoon
  • Extra ghee for greasing mould, plam, and very little for dough 

How to Make:

  1. Stuffing Making,
    • Take ghee in a pan.
    • Add scraped coconut followed by grated jaggery .
    • Stir & cook in medium heat until jaggery has got melted & releases moisture. It will take almost 5 minutes.
    • Add light roasted poppy seed and mix well.
    • When liquid part gets dried from the mixture , add cardamom powder and mix well. Turn off the flame. Keep aside.
  2. Dough Making,
    • Take a deep pan.
    • Add water followed by ghee and salt.
    • Bring it to boil.
    • Once boil comes, turn off the heat & add rice flour. Mix immediately with water.
    • Cover and rest it for 5 minutes.
    • After that, transfer the flour into a bowl.
    • Try to get all flour together and make a dough. Knead properly.
    • When dough forms, Sprinkle little water atleast for 2 times & knead the dough. It will make your dough soft & smooth which is required,
    • At last, apply little ghee on the dough.
  3. Make Modak,
    • Handmade,
      • First grease your hand with ghee.
      • Take a lime size dough ball.
      • Now try to make a bowl by pressing with your fingertips lightly. 
      • To make fold, pinch from all sides.
      • Fill with the stuffing.
      • Then rotate from bottom in one hand and use another hand(finger tips) to close the modak by getting together all folds. 
      • Make the top pointed by pinching. It is ready to steam.
    • Using Mould,
      • Grease inside of the mould with ghee.
      • Take a lime size dough ball.
      • Now start pressing the dough into mould and make a hole in the middle.
      • Make sure dough is set to all the side and press lightly to the bottom to get the pointed modak top.
      • Feel with the stuffing.
      • Then take a very small portion of the dough to close from the bottom of the modak.
      • Cut down the excess dough which is coming out.
      • Open the mould & take out the modak gently. Keep aside for steam.
  4. Steam Modak,
    • Take hot water in a vessel. Put a steamer on it.
    • Grease the steamer with ghee.
    • Place all modak for steam. Make sure there are some spaces between modaks.
    • Allow to steam for 10 minutes in medium heat.
    • Then it is ready to serve. Enjoy it hot.

My Tip: 

  • You can make the stuffing as per your choice by adding roasted sesame seed, dry fruit etc. But coconut and jaggery is should be the base of the stuffing.
  • If you get turmeric leaves, you can add one in steaming water or in steamer. It gives a very nice smell to the modak.
  • You can change the amount of cardamom powder or increase jaggery as per your choice.
  • If you see, modak is breaking while making, just add little water & ghee to the dough and knead one more time.
  • You can use grated coconut instead of scrapped coconut.
